I have been saving some herbs by freezing. For cilantro, I cut up the extra and put it in an ice cube tray with a little water. I just pop out a cube for cooking. The cilantro stayed as bright green and flavorful as it was when I bought the fresh cilantro. The tip came from the package I bought...
